The landscape of Liverpool’s professional heart has been transformed with the arrival of a new hospitality landmark.
Parliament Square Coffee has officially opened the doors to its new flagship site on Cook Street, marking the next chapter for the rapidly growing speciality coffee and brunch brand.
This expansion represents a major leap for the business, moving into an impressive 3,500 sq ft venue, located just behind The Ivy.
The site will welcome its first customers on Friday, 27th March, bringing together exceptional coffee, a British-inspired brunch menu and a new in-house bakery offering under one roof.
The brand has enjoyed a meteoric rise since it first launched on Parliament Street in June 2023 and quickly built a loyal community of coffee lovers across the North West.
Following the success of the original site, the brand expanded again in 2024 with a second site on Clarence Street, which also became home to the Parliament Square Academy, an educational facility for aspiring baristas.
However, the new Cook Street location represents the brand’s largest and most ambitious site to date, showcasing Parliament Square Coffee’s renowned speciality coffee as the House of Coffee, supplied by national partner Ozone Coffee, alongside its much-loved British-inspired brunch menu made with premium British ingredients and the best local produce.
New Flagship Coffee and Bakery at Cook Street

One of the most anticipated elements of the flagship is the launch of an in-house bakery, led by renowned city baker Jess Garland, formerly of Bakesale, who joins the team as Head Baker.
This strategic development marks an important milestone for Parliament Square Coffee as it brings its baked goods production fully in-house for the first time.
Jess will oversee a daily selection of freshly baked cakes, pastries and seasonal sandwiches, which will be available not only at the new Cook Street flagship but across all three Parliament Square Coffee locations in Liverpool.
Reflecting on the significance of this move, Hayley Commerford, Director of Parliament Square Coffee, said:

“Being able to bake our own cakes, pastries and sandwiches really feels like the final piece of the puzzle.

The venue has been meticulously designed to cater to the diverse needs of the city.
The Cook Street site will also feature a dedicated takeaway coffee bar, designed for the busy business district crowd looking to grab speciality coffee alongside fresh bakes and sandwiches on the go.
To further bolster the culinary side of the business, the team, led by new recruit Jon Baldwin, Head of Operations, will introduce a selection of classic British sandwiches, served from midday onwards and designed to complement the brand’s growing food offering.
Growth of Parliament Square Coffee in Liverpool

Jon Baldwin brings a wealth of expertise to the role, with 20 years’ experience in hospitality, including Bold Street Coffee’s earliest days, to more recent roles at, Buyers Club and R&H Fine Wines.
Sharing his enthusiasm for the project, Jon Baldwin, Head of Operations, said:

In addition to the food and caffeine offerings, guests will also be able to enjoy a carefully curated drinks selection, including British wines supplied by local merchant R&H and Camden Lager, further celebrating the brand’s focus on modern British produce.
Functionality remains at the forefront of the design, as the new flagship will also include a serviced meeting room for up to 12 guests, providing a convenient space for corporate meetings and private bookings. Reservations for the meeting room will open in April.

Despite the grand scale of the new venue, the founders remain committed to the ethos that built their initial following.
As with the brand’s other locations, the Cook Street site will operate on a walk-in only basis, maintaining the relaxed, welcoming atmosphere that has become synonymous with Parliament Square Coffee.

Opening hours for the new flagship are 7 am-7 pm Monday to Friday, and 8 am-7 pm on Saturdays and Sundays.
With its third site now open, Parliament Square Coffee continues to strengthen its presence in Liverpool while laying the foundations for future growth.
