A new Tikeasy bar, Danny C’s, is opening on Seel Street in the former Super Megabite site.
Created by hospitality veteran Daniel Cunningham, the new bar named Danny C’s will specialise in expertly made classic cocktails, as well as new creations put together by Danny himself inspired by his extensive travels from around the world.
Danny, 36, is originally from Derry, Ireland, but moved to Liverpool in 2009 to study Interior Architecture, specialising in Bar Design.
Making the decision to work in a bar whilst he studied, Danny believed that being in a bar setting would help him to understand the process better.
His first hospitality job was as a Barback at Alma de Cuba where he quickly progressed to Bar Manager in 14 months.
Danny then became part of the opening team for Salt Dog Slims and 81 Ltd, which served as the foundation to his career in hospitality. During this time, he entered his first bartender competitions, which helped Danny showcase his talent on the hospitality scene.
From there, the experienced bartender became an independent beverage consultant, which took Danny all over the world and presented opportunities in the Maldives, USA, Barbados, Venezuela, Oslo, Dubai, Cayman Islands and Thailand to name a few, as well as places closer to home in Pwllheli in Wales and London where he supported brands with everything from recruitment and venue design, to menu development and staff training for new and existing venues.
Following his globe trotting to help other brands, Danny set about opening his own bar in Singapore.
Over the next few years the Interior Bar Design expert pursued his passion in distilling his own spirits and creating his own beverage brand. He learned the trade of brewing and distilling on the
job while consulting on the opening of several rum distilleries in the Caribbean.
Arriving back in Liverpool following the pandemic, Danny has continued working in the hospitality industry in the North West but now, is embarking on opening his own Tikeasy in the heart of the city centre, on Liverpool’s popular Seel Street.
Danny C’s will open this Autumn with 35 seats, with guests enjoying table service only. Bookings will be encouraged, but walk-ins accepted depending on availability.
With a menu inspired by Danny’s previous travels, there will be sections for drinks from specific continents including the Middle East, South East Asia and the Americas. Staff members that return from their travels will be encouraged to put their own spin on new cocktails, with their creations being continuously added to the menu.
Danny C’s will also be home to a Classics cocktail section with all of the notable favourites including |Martinis, Old Fashioned, Mojito, Caipirinha, Negroni and more, as well as an extensive list of 100 classic cocktails that can be made on request for the experienced cocktail drinker with a niche preference.
A combination of a speakeasy and tiki bar, Danny C’s will sit firmly in the middle as a Tikeasy; a mix between these two ideas. It’ll be a more relaxed speakeasy with no password access required, but will retain the professional service style and quality. Danny C’s will also be a classier Tiki bar with a relaxed island-like atmosphere.
A Tikeasy was chosen as it fits Danny’s personality best; combining his passion for excellent, professional service without losing the personal and relaxed touch.
Danny explained:
“Danny C’s will reflect my personal experience from travelling around the world, experiencing the beauty of many different styles of hospitality. Every country has its own approach depending on its culture and diversity and each location has great ideas that can be implemented to compliment each other.
“My Tikeasy will incorporate these special styles of service to create the best level of service possible. I’ve taken a lot of inspiration from Asia for the bar design and service style where narrow townhouses in places such as Bangkok, Singapore and Tokyo require the space to be used intelligently. This coupled with bespoke, individualised service will make Danny C’s a truly global beverage experience and offer an entirely different offering to anywhere else in the city.”
