Steak restaurant Flat Iron has confirmed it will open its first Liverpool restaurant on Castle Street before Christmas 2026, bringing its popular affordable steak dining experience to the heart of the city centre.
The new 100-cover restaurant will be located at 25 Castle Street, one of Liverpool’s most historic streets, inside a Grade II listed building that was originally constructed in the 1930s as the headquarters of Royal Liver Assurance.

Known for serving high-quality steak at accessible prices, Flat Iron will introduce Liverpool diners to its signature Flat Iron steak, a cut taken from the featherblade that is celebrated for its flavour, tenderness and juiciness.
The menu will also feature a rotating selection of specials, including daily Wagyu options and a smashed onion double cheeseburger made using beef from Flat Iron’s own herd of cattle in Thirsk, North Yorkshire.
Diners will be able to choose from a selection of popular sides, including beef dripping chips, creamed spinach, truffled macaroni cheese and crispy bone marrow garlic mash.
The drinks menu will feature a carefully selected wine list, including Flat Iron’s own Malbec, alongside draft beers and a range of signature cocktails.
Flat Iron Liverpool to open inside historic Castle Street building
The restaurant’s interior has been designed by Macaulay Sinclair, taking inspiration from the building’s history while maintaining the warm, welcoming atmosphere associated with Flat Iron restaurants.
High ceilings, soft lighting and reclaimed furniture will create a comfortable dining environment, with a central bar connecting the restaurant’s drinking and dining spaces.
The opening will bring another major hospitality name to Castle Street, which has become one of Liverpool city centre’s most popular destinations for restaurants, bars and dining experiences.
Speaking about the upcoming Liverpool opening, Flat Iron’s Head of Beef, Fred Smith, said:
“It’s been a long time coming but we’re very pleased to confirm we’re opening our doors this side of Christmas!
“Our mission has always been to offer remarkable, carefully sourced steak at an affordable price and we can’t wait to share it with the people of Liverpool.”
About Flat Iron
Flat Iron was founded in 2012 by Charlie Carroll, initially operating as a pop-up restaurant above a pub in East London.
The concept was built around a simple ambition to make great steak accessible to everyone, focusing on carefully sourced beef, straightforward menus and affordable prices.
The brand has since expanded across the UK, with 14 restaurants in London and locations in Cambridge, Leeds, Manchester, Brighton, Bristol, Newcastle and Birmingham.
Working alongside British farmer Charles Ashbridge, Carroll and Fred Smith have also established their own herd of cattle in Thirsk, Yorkshire, with a particular focus on rearing Wagyu beef.
Flat Iron Liverpool is expected to open before Christmas 2026, although an exact opening date has yet to be announced.
The restaurant will be located at 25 Castle Street, Liverpool, L2 4TA.
