Parliament Square Coffee reveals plans for major flagship expansion

Parliament Square Coffee has unveiled plans for a major expansion with the opening of a new 3,500 sq ft flagship site on Cook Street in early 2026.

Founded by husband-and-wife team Christopher and Hayley Commerford, the brand launched its first site on Parliament Street in June 2023 and has since developed a loyal community of coffee lovers across the North West.

Christopher, 44, from West Derby, spent many years working as a chef in hospitality before spotting an opportunity in the Parliament Square development to create a standout brunch and specialty coffee concept. 

After two decades with British Airways, Hayley, 40, joined forces with Chris, and together they have built Parliament Square Coffee into a respected and much-loved brand known for specialty coffee, elevated brunch and high-quality snacks.

In 2024, the couple opened their second location on Clarence Street, which also became home to the Parliament Square Academy; an educational facility for aspiring baristas.

The new Cook Street site will showcase the brand’s renowned specialty coffee, supplied by esteemed national partner Ozone Coffee, alongside a British-inspired brunch menu featuring premium ingredients and the best local produce. 

Situated in the heart of Liverpool’s business district, the new flagship Cook Street store will also include a serviced meeting room for up to 12 guests, providing a convenient space for local businesses and corporate bookings.

This year marked a new chapter for Parliament Square Coffee as the brand continued to celebrate modern British heritage and culture in all its diversity; across food, music, sport and shared history. 

Proudly patriotic (but not political), Parliament Square Coffee welcomes everyone who calls Britain home. The historic Cook Street location will further reflect these values through its architecture and setting.

Hayley Commerford, Director of Parliament Square Coffee, said: 

“Parliament Square Coffee has grown into an incredible brand, and we’re thrilled to be opening our third site in Liverpool—our new flagship on Cook Street. This store brings together everything our brand represents, from exceptional coffee and British-inspired food to a dedicated meeting space and expanded corporate catering. Christopher Commerford, Director of Parliament Square Coffee, added:
