In the latest edition of our ‘Faces behind the Business’ series, we caught up with Nikolaos Fylladitakis, aged 34, founder and CEO of Laros; an authentic Greek street food restaurant located on Bold Street.

When did you first get into the industry? 

I have been involved in hospitality from the age of 15. I have always been fascinated by how the industry and what it has to offer. I became a business owner at the age of 27 and since then have been involved with restaurants as well as apart-hotels.

How long have you worked at Laros and what is your job role?

I am the founder and CEO of Laros and although the concept was born almost a year ago, we have been up and running for 5 months.

What is Laros’s ethos?

We are an independent business which is focused on authenticity and tradition. All of our products are brought directly from Greece, or sourced locally from trusted suppliers. We want to advocate the true Greek cuisine with authentic flavours through the finest produce. We work very closely with our staff so that we all share the same values and this comes through on our plates. Our staff are part of the family, and together we aim to bring to the UK the best piece of Greece. I strongly believe that a truly successful business is one that disrupts the market, innovation is great but to set apart the good from the great you have to do something completely novel. Laros brings authentic, fine, affordable Greek street food.

What’s the best bit of advice you could give to anyone looking at working in your line of work?

Hospitality is a very tough environment, and the workload is both physically and emotionally taxing at any level. If you truly love what you do; be passionate, be patient, be persistent and you’ll achieve your goals. 

What do you love most about Liverpool?

What is there not to love about it? Liverpool is one of the most amazing cities in the world (says a Greek!) The city is vibrant, busy, diverse, encompassing and loving. There is so much to do and see, so much culture, so much colour and so much atmosphere. The people are friendly and welcoming and every year the city becomes more and more exciting as new businesses open which bring in a piece of their own culture. Liverpool is the city of great potential made up of the nicest people.

Authentic- Inclusive- Disruptive.
